Vincci Corporate HotelsThe hotel chain strengthens its commitment to continuous improvement in the Food&Beverage area through this alliance with the training division of the Madrid-based restaurant Saddle, which holds one Michelin Star and two Repsol Suns.
Vincci Hoteles takes a further step in its commitment to excellence in hospitality and guest experience with a specialised training programme for its dining room and restaurant teams, the result of an agreement with Saddle Hospitality, the training school of the prestigious Saddle restaurant in Madrid.
The initiative, promoted by the Corporate Food&Beverage Department, aims to further professionalise service standards and consolidate a strategy of continuous improvement across all group establishments. The programme is designed to transfer the approach and best practices of haute cuisine to the hotel environment, with technical and experiential training that elevates every moment in the dining room to the level of a unique experience. In addition, it responds to the hotel group’s commitment to team training and the development of expertise in order to create a distinctive identity and take on new gastronomic challenges, with talent attraction and development being essential for Vincci Hoteles, and human capital standing as one of its fundamental pillars.

The training plan, developed under the supervision of Israel Ramírez, dining room director at Saddle, includes technical sessions, practical workshops and on-site visits to Saddle’s spaces, where participants can immerse themselves in a philosophy focused on refined hospitality, respect for the product and operational excellence.
“Today’s guest is increasingly demanding, but also more receptive to the details that make the difference,” says Enrique Lezcano, F&B Director at Vincci Hoteles. “With this programme, we want to go beyond protocol to train teams who understand hospitality as a form of expression and care. Investing in continuous training in haute cuisine allows us to grow from within, equip our internal talent with the right tools and continue to surprise with proposals that combine creativity, technique and personalised attention that leaves a lasting impression.”

In this first phase of the agreement, dining room teams from the restaurants Recoveco (Vincci Selección Unuk 5*GL, Seville), Alamar (Vincci Selección Aleysa 5*, Benalmádena) and Ponte de Ferro (Vincci Ponte de Ferro 4*, Vila Nova de Gaia, Portugal) have taken part, completing training in areas such as modern cocktail making, sommelier skills, infusion service and customer care techniques. They will soon also attend a specialised course in dining room choreography, focused on refining coordination, service aesthetics and attention to detail.
Saddle Hospitality has been recognised for its innovative approach to training applied to high-end dining, combining classic and contemporary techniques with a vision of modern luxury centred on the guest. Through its Saddle Hospitality School, it offers specialised training in cocktails, wines, cheeses and hospitality, designed to bring gastronomic excellence to every level of the experience.
